Without fail, i’ll almost always go for the Tonkotsu Ramen with a draught beer. Everything in the ramen is made with clinical precision – there was a post about the noodle making machine being .2mm off. Yeah. Crazy. Crazy awesome, though – because that precision totally pays off – it still continues to be consistently one of the best bowls i’ve ever had. My only criticism is the charsiu (pork) is a little thin compared to other ramen joints, however, given that it’s Bangalow Sweet Pork (sustainable, premium quality pork) it’s easy to look past.
